Ingredients
- 2 chicken breasts
- 1 tbsp olive oil
- 1 tsp fresh Rosemary chopped
- ½ tsp black pepper
- ½ tsp salt
- ¼ cup dried cranberries
- ¼ cup goat cheese crumbled
Instructions
- Begin by butterflying the chicken breasts (slicing through the middle, but not all the way through.)
- Brush each side with olive oil and sprinkle with fresh rosemary, salt and pepper.
- Fill each chicken breast with goat cheese and cranberries.
- Fold over and place on a grill.
- If using a two-sided indoor grill, grill for 10 minutes. If using an outdoor or indoor one-sided grill, grill for 10 minutes per side.
