Cranberry Pear Buttermilk Muffins

Ingredients

Streusel Topping
  • 2/3 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1 teaspoon cinnamon
  • 5 tablespoons salted butter melted
Muffins
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 3/4 cup buttermilk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 5 tablespoons salted butter melted
  • 1/2 cup chopped fresh pear (about ½ of a large pear-peeled, cored, and cut into small pieces)
  • 1 cup coarsely chopped fresh cranberries
  • 1/2 cup chopped toasted pecans

Instructions

  1. Heat oven to 375º F. Line muffin pans with 18 paper liners (or 9 jumbo liners).
  2. Combine all streusel ingredients in a small bowl and set aside.
  3. In a medium bowl, sift together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  4. In a small bowl, whisk together the buttermilk, egg, and vanilla.
  5. Add the buttermilk mixture and melted butter to the dry ingredients. Stir just until most of the flour has been incorporated.
  6. Fold in the chopped pear, cranberries, and pecans. The batter will be thick.
  7. Divide between 18 liners - approximately ⅔ full.
  8. Evenly distribute the streusel topping on the batter in each cup, pressing down gently.
  9. Bake 20-25 minutes, just until a toothpick comes out clean when inserted in the middle of a muffin. Cool in pans on cooling racks for 10 minutes, then remove muffins from pans and allow them to cool completely.
