Cranberry Pesto Chicken Burgers

Ingredients

For burgers:
  • ⅓ cup dried cranberries
  • ½ cup boiling water
  • 1 pound ground chicken
  • ⅔ cup Panko bread crumbs
  • 2 tablespoons pesto
  • 1 tablespoon grated garlic
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 slices Brie cheese
For basil mayonnaise:
  • ¼ cup mayonnaise
  • 2 tablespoons pesto
For assembly:
  • 4 toasted Brioche buns
  • 4 handfulls micro greens

Instructions

For burgers:

  1. Add dried cranberries to a small bowl and just cover with boiling water. Let sit for 5 minutes while they reconstitute. Once plump, drain and chop.
  2. In a large bowl, add ground chicken, panko bread crumbs, pesto, grated garlic, kosher salt, black pepper, and chopped cranberries.
  3. Using your hands, mix until thoroughly combined and shape into 4 equal-sized patties.
  4. For cooking in a skillet: Place a 12-inch skillet over medium-high heat and add 2 tablespoons olive oil. When the oil is hot, add the burgers and cook on both sides until the patties are golden in color and the meat is fully cooked, about 5 minutes per side or 165 degrees F internally.
  5. For cooking on the grill: Preheat your grill to medium-high heat. Add your patties to the grill and cook until fully cooked and the patties are firm, about 10 minutes or 165 degrees F internally.
  6. Turn off the heat, top with Brie cheese, cover, and let the warmth of the pan or grill melt the cheese.
For mayo:
  1. Mix the mayonnaise and pesto together until fully combined and smooth.
For assembly:
  1. To serve, lay out the buns, slather with basil mayonnaise, add the burger and top with a handful of micro greens.
