Cranberry Pistachio Oatmeal

Ingredients

  • 3 ½ cups water
  • ½ cup dried cranberries
  • 2 cup old-fashioned oats
  • ¼ teaspoon salt
  • ½ cup shelled pistachios
  • ½ cup light brown sugar
For serving:
  • butter
  • cream

Instructions

    Cup of Yum
  1. In a medium saucepan, over high heat, bring the water and dried cranberries to a boil.
  2. Stir in the oats and salt.
  3. Reduce the heat to medium and cook, stirring frequently, for about 5 minutes.
  4. Stir in the pistachios and brown sugar. Stir until sugar has completely melted.
  5. Serve with a pat of butter and a drizzle of cream.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Oats will thicken as they sit, so you'll need to add a splash of milk or water before reheating in the microwave.
