Ingredients

For the Crust
  • 1 1/2 cups graham cracker crumbs
  • 3 1/2 tablespoons granulated sugar
  • 1/3 cup butter melted, unsalted
For the Filling
  • 12 ounces cream cheese at room temperature
  • 3/4 cup granulated sugar
  • 1 teaspoon lemon juice
  • 1 1/2 teaspoons vanilla extract
  • 2 egg at room temperature, large
  • Whipped Cream for serving (optional, or fruit compote

Instructions

  1. Mix the crust ingredients in a medium bowl until well blended.
  2. Press the mixture into the bottom and sides of a 9-inch pie dish and bake at 350 degrees F for 6-8 minutes. Allow to cool.
  3. Beat the cream cheese with sugar, lemon juice, and vanilla extract until smooth. Add eggs one at a time, mixing just until incorporated.
  4. Pour the filling into the cooled crust and bake at 350 degrees F for 25-30 minutes or until set. Cool before refrigerating.
  5. Refrigerate the pie for at least 4 hours. Serve chilled with whipped cream or fruit compote on top if desired.
