Creamy Asparagus Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon minced garlic 
  • 1 cup chopped white onion about 1 small onion
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 5 cups chicken broth or vegetable broth
  • 2 pounds asparagus cut into 1-inch pieces 2 bunches
  • ½ cup heavy whipping cream
  • 1 teaspoon salt or to taste
  • ¼ teaspoon ground black pepper or to taste

  1. Add 1 tablespoon olive oil, 1 tablespoon minced garlic, and 1 cup chopped white onion to a large pot and heat over medium-high heat. Cook for 3-5 minutes until tender. Add 2 tablespoons unsalted butter and 2 tablespoons all-purpose flour until fragrant and golden brown.
  2. Slowly whisk in 5 cups chicken broth, then add 2 pounds asparagus cut into 1-inch pieces . Bring to a boil, then reduce the heat to medium-low and simmer for 7-10 minutes until the asparagus is tender.
  3. Using an immersion blender or regular blender, blend the soup until it is completely smooth. Add in ½ cup heavy whipping cream, 1 teaspoon salt, and ¼ teaspoon ground black pepper and stir to combine. Heat over medium-low until warmed through. Serve hot.
