Healthy Creamy Avocado Pasta Sauce is a great alternative to traditional Alfredo sauce. Avocados, thick Greek yogurt, lemon juice, tomatoes and scallions make this wildly popular dish a favorite. Bacon optional!

Ingredients
- 2 avocados , pitted and sliced
- 8 ounces plain greek yogurt
- 1/2 teaspoon coarse kosher salt
- 4 cloves fresh garlic , chopped
- 1 tablespoon lemon juice
- 2 tablespoons flat parsley , roughly chopped
- 2 tablespoons fresh basil , roughly chopped
- 1 tablespoon extra virgin olive oil
- 1 pound Pasta of Choice , cooked according to package directions for al dente
- 2 cups cherry tomatoes , halved
- 1/4 cup scallions , sliced diagonally
- 1/2 cup Bacon , cooked and chopped (optional)
- lemon wedges, for serving
Instructions
- Combine the 2 avocados, 8 ounces plain Greek yogurt, 1/2 teaspoon coarse kosher salt , 4 cloves fresh garlic , 1 tablespoon lemon juice, 2 tablespoons flat parsley, 2 tablespoons fresh basil and 1 tablespoon extra virgin olive oil in a small food processor or blender. Pulse until smooth.
- In a large skillet, toss the hot cooked 1 pound pasta of choice with the avocado mixture until fully coated.
- Plate the pasta and top with 2 cups cherry tomatoes, 1/4 cup scallions and 1/2 cup bacon , all optional. Sere with lemon wedges, for serving .

Notes
- Other types of pasta can be used. Bacon is optional, this dish also tastes great with chicken and shrimp. Additional toppings can include crushed red pepper and freshly grated Parmesan cheese.
