- 12 ounces long pasta such as angel hair or spaghetti
- 2 cloves garlic minced
- 2 avocados ripe
- 2 tablespoons fresh basil leaves
- 2 tablespoons chopped fresh parsley
- 2 tablespoons heavy whipping cream do not substitute milk
- 1 tablespoon olive oil
- 2 teaspoons fresh lemon juice
- ½ teaspoon salt
- 3 tablespoons grated Parmesan cheese divided, more for garnish
- fresh herbs and chili flakes for garnish, optional
Instructions
- Combine garlic, avocados, basil, parsley, heavy cream, olive oil, lemon juice, salt, and 2 tablespoons parmesan cheese in a food processor.
- Pulse the mixture until it is smooth and creamy.
- Cook pasta al dente according to package directions. Drain well and reserve pasta water, do not rinse.
- While pasta is hot, toss with avocado sauce adding pasta water as needed to thin out the sauce.
- Garnish with remaining parmesan cheese and additional herbs if desired.

Notes
- Pasta cooked al dente (cooked a little firm) keeps the dish from getting mushy!
- Add additional fresh basil to the sauce if you'd like and save some extra for garnish.
- The addition of lemon to the sauce adds flavor but also keeps the avocado from turning brown.
- Don't rinse your pasta, the starches help the sauce stick to it.
- Pasta water is a bit starchy and can thin out the sauce to your liking but also helps the sauce cling to the pasta.
- Fresh parmesan and chili flakes are the perfect toppers for this recipe.
