Ingredients

  • 10 oz spaghetti or fettuccine
  • 1 clove garlic
  • 2 avocado medium, ripe
  • 1 cup spinach fresh
  • ½ cup walnuts
  • 1 tbsp lemon juice
  • ¼ cup olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • cooking spray
Optional Toppings
  • ¼ cup vegan parmesan cheese optional
  • ½ cup cherry tomato optional
  • ¼ cup parsley optional, fresh

Instructions

  1. Bring a large pot of water to a boil and cook pasta according to package directions. Set aside.
  2. Spray a pan lightly with cooking spray, and heat over medium heat. Add spinach leaves and cook until slightly softened, 2-3 minutes.
  3. Place the spinach, garlic, avocadoes, walnuts, lemon juice, olive oil, salt, and pepper into a food processor and blend until you have a smooth, creamy sauce. If you’d like it more liquid-y, add a bit more oil or lemon juice. Add additional salt and pepper, to taste.
  4. Toss the creamy avocado spinach sauce with the pasta.
  5. Optional: Garnish with cherry tomatoes, fresh parsley, and parmesan cheese.
