Ingredients

  • 4 bone in chicken thighs
  • 1 tablespoon olive oil
  • 2 teaspoons Italian seasoning
  • salt and pepper to taste
Creamy Bacon Mushroom Thyme Sauce:
  • 1 tablespoon olive oil
  • 8 ounces sliced white mushrooms
  • 6 lices cooked and chopped bacon
  • 1 cup heavy cream
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh thyme

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Heat the 1 tablespoon olive oil in large skillet over medium-high heat. Season the 4 bone in chicken thighs with 2 teaspoons Italian seasoning and salt and pepper to taste, and add the seasoned chicken to the pan.
  2. Sear each side of the chicken for 1-2 minutes until browned and place skillet in oven. Bake the chicken for 20 minutes or until they are cooked through. Set chicken aside on a plate.
  3. Add 1 tablespoon olive oil to the skillet and cook the 8 ounces sliced white mushrooms, tossing frequently until soft. Add the 6 slices cooked and chopped bacon, 1 cup heavy cream, ½ teaspoon salt, ¼ teaspoon pepper, 1 teaspoon garlic powder, and 1 tablespoon fresh thyme. Bring to a simmer and cook until the sauce starts to thicken.
  4. Add the chicken back to the skillet and heat for another minute. Serve immediately.
