Creamy Balsamic Peach Salad
This Creamy Balsamic Peach Salad is the perfect balance of sweet, savory, and tangy! With ripe peaches, creamy avocado, and crunchy toasted almonds, every bite brings a burst of freshness that feels like summer on a plate!
Ingredients
- 3-4 peach sliced into thin wedges, see note, or yellow nectarine
- 4-6 cups greens I used arugula, fresh
- 1 cup blueberries or blackberries
- ⅓ cup almonds shaved
- 1 avocado sliced, large
- ½ cup feta cheese crumbled
- 1 cup balsamic dressing homemade or store-bought, creamy
Instructions
- Assemble your salad with greens on the bottom, followed by the fruit, almonds, avocado slices, and feta cheese.
- Drizzle with balsamic dressing right before serving. Enjoy!
Notes
- both are amazing in this recipe. Use whichever you can get your hands on and is fresh and ripe.
- I used 3-4 cups of arugula and added a couple handfuls of spinach. Use more or less greens based on how many people you are serving. You can always add another peach or nectarine as well to make the salad go farther!
- You can buy shaved almonds already toasted or stir in them over medium heat on the stove for about 3-4 minutes til toasted. Walnuts or pecans are also delicious.
