Ingredients
- 4 boneless, skinless chicken breasts
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- ¼ teaspoon onion powder
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 1 cup low-sodium chicken broth
- 5.2 ounces Boursin cheese (1 wheel)
- 1 handful fresh spinach optional
- chopped fresh parsley optional, for serving
Instructions
- Pat dry the chicken breasts and pound them to an even thickness. Season with garlic powder, salt, pepper, and onion powder.
- In a large skillet, heat the olive oil and butter over medium-high heat. Sear the chicken for 6-7 minutes on each side until golden brown and cooked through. Ensure the internal temperature reaches 165°F. Remove the chicken from the skillet and set aside.
- Pour the chicken broth into the skillet and add the Boursin cheese. Stir until the sauce is smooth, and let it reduce for 5 minutes.
- Add the chicken back to the skillet, along with the optional spinach. Let it warm through. Serve with fresh parsley and enjoy.
