Creamy Boursin Chicken Recipe

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon onion powder
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 cup low-sodium chicken broth
  • 5.2 ounces Boursin cheese (1 wheel)
  • 1 handful fresh spinach optional
  • chopped fresh parsley optional, for serving

Instructions

  1. Pat dry the chicken breasts and pound them to an even thickness. Season with garlic powder, salt, pepper, and onion powder.
  2. In a large skillet, heat the olive oil and butter over medium-high heat. Sear the chicken for 6-7 minutes on each side until golden brown and cooked through. Ensure the internal temperature reaches 165°F. Remove the chicken from the skillet and set aside.
  3. Pour the chicken broth into the skillet and add the Boursin cheese. Stir until the sauce is smooth, and let it reduce for 5 minutes.
  4. Add the chicken back to the skillet, along with the optional spinach. Let it warm through. Serve with fresh parsley and enjoy.

Notes

  • Storage: Store Boursin chicken in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 3 months.
