Creamy Broccoli Cheddar Bacon Salad

A delicious broccoli salad full of bacon, cheddar, and almonds.  The creamy dressing on top is sweet and tangy and AMAZING!

Ingredients

  • 4 cups fresh broccoli florets
  • ¼ cup diced red onion
  • 8 ounces cubed cheddar cheese,
  • 8 lices cooked and crumbled bacon
  • ¼ cup sliced almonds
Creamy Dressing
  • ½ cup light mayonnaise
  • ½ cup low-fat Greek yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon sugar
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper

Instructions

  1. In a large bowl combine 4 cups fresh broccoli florets, ¼ cup diced red onion, 8 ounces cubed cheddar cheese, 8 slices cooked and crumbled bacon, and ¼ cup sliced almonds.
  2. In a medium bowl whisk together ½ cup light mayonnaise, ½ cup low-fat Greek yogurt, 2 tablespoons lemon juice, 1 tablespoon sugar, ¼ teaspoon salt, and ⅛ teaspoon pepper
  3. Pour the dressing over the salad ingredients and toss to coat. Chill until ready to serve.
