Ingredients
- 1 pound linguine pasta
- 1.5 pounds raw shrimp peeled and deveined
- 3 teaspoons Cajun Seasoning divided
- 6 tablespoons unsalted butter divided
- 3 medium multi-color bell peppers sliced
- 1 bunch green onions chopped
- 8 ounces white or cremini mushrooms sliced
- 2 cups heavy cream
Instructions
- Cook the linguine according to package instructions.
- In a large bowl, toss the shrimp with 1 teaspoon of Cajun seasoning.
- In a large skillet, melt 3 tablespoons of butter over medium-high heat.
- Add the seasoned shrimp to the skillet and cook until pink, about 3 minutes.
- Remove the shrimp from the skillet and set aside.
- In the same skillet, melt the remaining 3 tablespoons of butter.
- Add the sliced bell peppers, chopped green onions, and sliced mushrooms to the skillet. Sauté until tender, about 5 to 7 minutes.
- Sprinkle the remaining 2 teaspoons of Cajun seasoning over the veggies and cook for an additional minute.
- Pour in the heavy cream and bring to a simmer. Simmer for 2 minutes.
- Stir in the cooked linguine and toss until evenly coated with the sauce and veggies.
- Top with the cooked shrimp and squeeze fresh lemon over the pasta. Serve hot.
