Ingredients
- 1 pound pasta penne, rotini, farfalle, or your favorite
- 1 tablespoon olive oil
- 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
- 6 lices Bacon cooked until crispy and crumbled
- 1 onion chopped
- 2 cloves garlic minced
- 1 10.75 ounce can condensed cream of chicken soup (or cream of mushroom for a variation)
- 1 cup chicken broth
- ½ cup heavy cream or sour cream or Greek yogurt for a lighter option
- ¼ cup ranch dressing or to taste
- ½ cup shredded cheddar cheese or Monterey Jack cheese plus more for topping
- ¼ cup chopped fresh parsley optional, for garnish
- salt and pepper to taste
Instructions
- Cook pasta: Cook the pasta according to package directions until al dente. Drain and set aside, reserving about ½ cup of pasta water.
- Cook chicken and bacon: While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook until browned on all sides and cooked through. Remove the chicken from the skillet and set aside. In the same skillet, cook the bacon until crispy. Remove the bacon and set aside on a paper towel-lined plate to cool. Once cool, crumble the bacon.
- Sauté onion and garlic: Add the chopped onion to the skillet and cook for 5-7 minutes, until softened. Add the minced garlic and cook for 1 minute more, until fragrant.
- Make sauce: Stir in the condensed cream of chicken soup, chicken broth, heavy cream (or sour cream or Greek yogurt), and ranch dressing. Bring to a simmer and cook for 5-7 minutes, stirring occasionally, until the sauce has thickened slightly.
- Add cheese, chicken, and bacon: Stir in the shredded cheese until melted and smooth. Return the cooked chicken to the skillet. Add the crumbled bacon, reserving a small amount for garnish.
- Combine pasta and sauce: Add the cooked pasta to the skillet and toss to coat evenly with the sauce. Add a little of the reserved pasta water if needed to loosen the sauce.
- Garnish and serve: Stir in the chopped parsley (if using). Serve the Creamy Chicken Bacon Ranch Pasta hot, topped with extra shredded cheese and the reserved crumbled bacon.
