Creamy Chicken Dorito Casserole Recipe

Ingredients

  • 2 Cups chicken shredded
  • 1 8 ounce cream cheese package
  • 1 10 ounce diced tomatoes with green chilies canned, brand: ROTEL
  • 1 10 ounce corn drained, whole kernel, canned
  • 1 1 ounce taco seasoning package
  • 1/2 Cup sour cream
  • 2 Cups cheddar cheese shredded
  • 3 cups Nacho Doritos crushed
  • cilantro diced tomatoes, lettuce, avocado slices, optional garnish

Instructions

  1. Preheat the oven to 350° and spray a 9×13 inch pan with nonstick spray
  2. In a large bowl combine, cream cheese, sour cream, and taco seasoning until well mixed.
  3. Then add the Rotel and corn.
  4. Add the shredded cooked chicken.
  5. Add 1 cup of the shredded cheddar cheese and mix.
  6. Pour the chicken mixture into the pan and smooth out.
  7. Place in the oven and bake until bubbly.
  8. Remove and sprinkle with crushed Doritos.
  9. Add the remaining cup of cheese and bake for an additional 5 minutes.
  10. Remove from the oven.
  11. Serve with chopped cilantro, sour cream, or your choice of toppings.

Notes

  • Add the crushed Doritos in the last 5 minutes of baking or cover the casserole with foil to prevent the chips from browning too much.
  • This dish pairs well with a fresh side salad to balance its richness.
  • Store leftovers in an airtight container in the fridge for up to 5 days; freezing is not advised due to texture changes.
