Ingredients

  • 1 1/2 cups diced chicken Rotisserie works great
  • 16 oz potato gnocchi
  • 4 tablespoon butter
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 1 cup carrots shredded
  • 1 cup celery diced
  • 1/4 cup flour all purpose
  • 3 cups chicken broth
  • 2 1/4 cups half and half
  • 2 cups spinach chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 fresh thyme sprigs
  • 1/4 teaspoon nutmeg

Instructions

  1. Melt the butter in a large Dutch oven or pot over medium heat.
  2. Add in the carrots, celery, and onion. Saute for about 5 minutes before adding in the minced. Cook until onions are translucent and vegetables get tender.
  3. Stir the flour into the vegetables and cook for another 2 minutes.
  4. Gradually pour in the half and half while stirring to prevent clumping. Bring the mixture to a simmer and cook for 3 minutes, or until thickened.
  5. Add in the chicken and chicken broth. Bring mixture to a boil.
  6. Stir in the gnocchi, salt, pepper, nutmeg, and thyme. Simmer for 5 minutes or until gnocchi is cooked through and tender.
  7. Stir in the spinach and cook until just wilted. Serve and enjoy!
