Creamy Chicken Noodle Soup
Creamy chicken noodle soup is the best comfort food for a cold night or when you're feeling under the weather.
Ingredients
- 2 tablespoons butter unsalted
- 1 yellow onion diced
- 2 carrot peeled and diced
- 3 celery diced, stalks
- 2 cloves garlic grated or minced
- salt freshly ground, to taste
- black pepper freshly ground, to taste
- 2 teaspoons sage chopped, fresh
- 2 teaspoons thyme chopped fresh
- 2 teaspoon rosemary chopped, fresh
- 4 cups chicken broth low sodium
- 2 cups milk whole
- 3 tablespoons flour
- 2 cups egg noodles uncooked
- 3 cups chicken breast shredded, cooked, boneless, skinless
Instructions
- In a large pot, melt the butter over medium high heat. Add in the onion, celery and carrots and sauté until they've softened, about 5 minutes. Add in the garlic and fresh herbs and cook another minute. Season with salt and pepper.
- In a measuring cup or small bowl, whisk the flour in with the milk making sure there are no lumps. Pour the chicken broth and milk mixture into the pot and stir everything together.
- Bring the soup to a gentle boil then add in the egg noodles and shredded chicken. Cook for 10 minutes or until the noodles are soft. Season with additional salt and pepper as needed then serve.
