Creamy Chicken Soup

Ingredients

  • 6 trips Bacon thick-cut
  • 1 yellow onion diced
  • 4 cloves garlic minced
  • 2 large chicken breast about 1 pound
  • 6 cups chicken broth
  • 2 medium-sized potato chopped, Yukon gold variety
  • 1 tomato chopped, vine-ripened
  • 4 cups baby spinach
  • 1 cup heavy cream
  • ½ tsp salt to taste, sea salt
  • ¼ tsp black pepper to taste

  1. Heat a large thick-bottomed pot (such as a Dutch oven) on a stove top over medium-high heat and transfer the strips of bacon to the hot surface. Cook, flipping every 2 minutes or so, until bacon reaches your desired level of crispiness. Once cooked to your liking, move the bacon to a plate and leave the bacon drippings in the large pot.
  2. Leaving the pot on medium-high heat, transfer the two chicken breasts to the hot surface and brown for 3-5 minutes per side, or until both sides are golden brown.
  3. Transfer the chicken to a plate and set aside.
  4. Add the chopped onion to the pot, and saute, stirring occasionally, until softened, about 5-8 minutes. Add in the fresh garlic and continue sautéing another 2 minutes.
  5. Transfer the chicken back to the bottom of the pot, along with the broth. Cover the pot and bring the soup mixture to a full boil. Once boiling, reduce to low heat (or medium-low heat) and cook at a gentle bubble for 45 minutes.
  6. Remove the cooked chicken breasts from the pot and transfer them to a cutting board. Use two forks to shred the chicken breasts and transfer the shredded chicken back into the pot.
  7. Add the chopped potatoes, tomato, and spinach to the pot. Cover and return to a full boil, then reduce the heat to a gentle boil. Cook for 20 minutes, or until the potatoes have softened to your liking.
  8. Stir in the heavy cream. Taste the soup for flavor and add sea salt and black pepper to your personal taste.
  9. Serve creamy chicken soup in big bowls with crusty bread and butter.
