Creamy Cilantro Avocado Salad Dressing

Made with creamy avocado, fresh cilantro, lime juice and cumin, this easy salad dressing recipe is delicious over greens or served as a dip with veggies!

Ingredients

  • 1 avocado (halved and pitted)
  • ½ cup cilantro
  • ¼ cup lime juice
  • ¼ cup extra virgin olive oil
  • ¼ cup water
  • 1 clove garlic
  • ½ teaspoon cumin
  • 1 pinch chili flakes
  • salt (to taste)
  • salad greens (to serve)

Instructions

    Cup of Yum
  1. Place all ingredients in a high speed food processor and pulse until smooth and creamy. Check for seasoning and add more salt or chili flakes to taste. Serve over salad greens.

Notes

  • If the dressing is too thick, add a little lime juice or water to reach desired consistency.
