Creamy Cilantro Dressing

This Creamy Cilantro Dressing doubles as a sauce and is fabulous on everything from tacos, burritos, sandwiches, and wraps, to roasted vegetables, grilled meats and even fries!

Ingredients

  • 1 cup roughly chopped cilantro
  • 1 clove garlic , minced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lime or lemon juice
  • 3 tablespoons sour cream
  • 3 tablespoons quality mayonnaise
  • 1 teaspoon honey
  • 3/4 teaspoon salt

Instructions

  1. Place the cilantro, olive oil, lime or lemon juice, garlic, honey and salt in a food processor and blend until smooth. Add the sour cream and mayonnaise and blend until incorporated.Pour the sauce into a glass jar, screw on the lid, and chill for at least 2 hours before serving, preferably longer. Stored in an airtight jar in the fridge it will keep for up to a week.Makes about 1 1/2 cups.
