Creamy Cucumber Salad

This Creamy Cucumber Salad is the perfect addition to any summer cookout. Bite-sized slices of cucumber are tossed in a delectable sour cream and mayo dressing with dill. It's easy to make and the perfect side for your next cookout.

Ingredients

  • 2 English cucumber or 6-8 small cucumbers
  • ½ cup sour cream or full fat plain Greek yogurt
  • ¼ cup mayonnaise
  • ¼ cup dill minced, fresh, plus extra for garnish
  • 3 Tablespoons white vinegar
  • ½ teaspoon granulated sugar
  • salt to taste
  • black pepper fresh cracked, to serve

Instructions

  1. Take your cucumbers and slice them into ¼ inch slices and add them to a large bowl.
  2. Combine the sour cream, mayonnaise, dill, vinegar and sugar in a medium bowl and whisk to fully combine.
  3. Taste and add salt one pinch at a time, stirring in between until you reach the desired flavor.
  4. Pour the dressing over the cucumbers and toss to coat.
  5. Cover and refrigerate for at least one hour to allow the flavors to marinate.
  6. After one hour, toss the salad, add extra minced dill and fresh cracked pepper to serve.
