Creamy Cucumber Salad blends thinly sliced cucumbers and red onions with fresh dill, coated in a dressing of Greek yogurt, apple cider vinegar, and a touch of maple syrup. The salad balances cool crispness with a smooth, tangy dressing, suitable to serve chilled as a refreshing side dish.
Ingredients
- 2 large cucumber thinly sliced
- ½ red onion thinly sliced
- 3 Tablespoons dill chopped, fresh
- ½ cup plain full-fat Greek yogurt
- 2 Tablespoons apple cider vinegar
- 1 teaspoon maple syrup
- ½ teaspoon salt sea salt
- ¼ teaspoon black pepper
Instructions
- Add sliced cucumbers, onion and fresh dill to a medium mixing bowl and stir to combine. Set aside.
- In a small bowl whisk together yogurt, apple cider vinegar, maple syrup, salt and pepper.
- Drizzle on dressing and toss until everything is coated.
- Taste and add additional salt and pepper, if needed. Serve immediately or cover bowl and chill in the fridge and let sit for 3-4 hours before serving. Overnight works great too as this salad tastes better after it has had time to sit.
