Creamy Cucumber Salad Recipe

This Creamy Cucumber Salad combines thinly sliced cucumbers and purple onion with a tangy sauce made from sour cream, lemon juice, garlic, and dill. Ingredients

  • 1 1/2 lbs cucumber 2 english cucumbers or 7-10 small ones
  • 1/2 purple onion thinly sliced, medium; or yellow onion
  • 1 Tbsp dill chopped, fresh or frozen
  • 1/2 cup sour cream reduced fat is ok
  • 1/2 Tbsp lemon juice from 1/2 small lemon, fresh
  • 1 garlic pressed or grated, clove
  • 1/2 tsp salt or to taste, fine sea salt and pinch
  • 1/2 tsp black pepper or to taste, fine sea salt and pinch

Instructions

  1. In a small bowl, combine sour cream, lemon juice, garlic, dill, salt and pepper to taste. Stir and set aside while prepping salad.
  2. Peel (if necessary) and slice cucumbers into thin rounds or half rounds if using large cucumbers. Place in a large mixing bowl. Add thinly sliced onion.
  3. Just before serving, pour the sauce over the cucumbers and onions, and mix to coat. After adding sauce, the salad will stay fresh for about 2-3 hours if refrigerated.

Notes

  • For a milder onion flavor, replace the sliced onion with about 1/3 cup chopped chives or green onion.
  • Consider adding 1-2 tablespoons mayonnaise to the dressing in place of lemon juice for a richer texture.
  • Plain Greek yogurt can be used as a substitute for sour cream, though omitting the lemon juice is recommended with yogurt.
