Creamy Garlic Chicken with Spinach and Cherry Tomatoes

Chef Giorgos Tsoulis presents an incredibly easy and super delicious creamy chicken garlic recipe! The chicken is cooked with cherry tomatoes in a wonderful, rich parmesan sauce. Pure bliss!

Ingredients

  • 4 chicken breast cut into large pieces
  • 250 g cherry tomato halved
  • 3 garlic finely chopped, cloves
  • 150 g baby spinach
  • 200 ml heavy cream
  • 200 ml chicken broth
  • 1 tsp oregano dried
  • 100 g Parmesan Cheese grated
  • salt
  • black pepper
  • olive oil

Instructions

  1. Heat a pan over medium-high heat then add a little olive oil and the chicken pieces. Season with salt and pepper and cook until golden brown on both sides.
  2. Add the cherry tomatoes and garlic, and sauté for an additional 2 minutes.
  3. Add the spinach, heavy cream, chicken broth, and oregano. Season with additional salt and pepper if needed. Simmer until the sauce thickens slightly.
  4. Remove from heat. Sprinkle with grated Parmesan, stir to combine, and serve warm.

Notes

  • Chef’s tip: If you prefer to cook the chicken breasts whole rather than cut, cover the pan with a lid while cooking to retain moisture.
