Ingredients

  • 2 tablespoons butter
  • 2 cloves garlic finely minced
  • 1 ½ cups dry orzo pasta
  • 2 ½ cups chicken broth
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ⅓ cup heavy cream
  • ¼ cup shredded Parmesan cheese
  • 2 tablespoons fresh parsley

Instructions

    Cup of Yum
  1. Melt the butter in a large skillet on the stove over medium-high heat.
  2. Add the garlic and cook for 1 minute. Add the orzo pasta, toss to coat in the butter and toast for 2-3 minutes.
  3. Add the chicken broth, salt and pepper and bring the liquid to a simmer.
  4. Reduce the heat to medium-low and simmer, stirring often, for 15 minutes, or until most of the liquid is absorbed and the pasta is cooked to your preference.
  5. Stir in the heavy cream, parmesan cheese and parsley. Serve immediately.

Notes

  • To make this recipe gluten free, use  gluten-free orzo.
  • To make this recipe vegetarian, use vegetable broth, instead of chicken broth.
  • Store leftover garlic parmesan orzo in an airtight container in the fridge for up to 7 days.
  • I like to reheat it in the microwave for 2 minutes, but you could also reheat it in a pot on the stove over medium heat. If it appears that the orzo is drying out, add 1-2 tablespoons broth or water.
