Creamy Greek Yogurt Feta Dressing
This Creamy Greek Yogurt Feta Dressing blends crumbled feta cheese with green onion, garlic, and herbs into a rich, thick dressing. Ingredients
- ¾ cup feta cheese approx. 3 oz, crumbled
- 1 green onion stalk
- 3 TBSP olive oil quality
- 3 TBSP red wine vinegar
- 3 TBSP yogurt plain, Greek
- 2 TBSP water filtered
- 1 clove garlic
- 1 TBSP olive oil (seperate from above)
- ⅛ tsp salt
- ⅛ tsp oregano dried
- ⅛ tsp dill dried
Instructions
- Using a food processor or blender, combine feta, green onion, olive oil, vinegar, yogurt, water and blend.
- To nix the bite of raw garlic, add one clove of pressed garlic to a small bowl with olive oil and microwave for 15 seconds to gently cook the garlic. Alternatively this can be done stove-top via sautéing or simply served up raw if you like your dressing with a garlicky bite!
- Add oil and garlic to dressing along with salt, oregano, and dill.
- Pulse/blend until creamy and get ready to pour this on everything!
Notes
- If you don't have a blender or food processor, crumble the feta well and whisk with the other ingredients for a rustic texture.
- Adjust the consistency by adding more water or olive oil to make the dressing thinner if desired.
- Fresh herbs can be substituted for dried; use about double the amount and adjust to taste.
- Pressing or gently cooking garlic softens its flavor, but raw garlic can be used if a sharper taste is preferred.
