Ingredients

  • 20 button mushrooms , cleaned stems removed
  • 4 ounces cream cheese , softened
  • 1 cups cheddar cheese , shredded
  • 1 fresh jalapeno , minced (seeded if you prefer less heat)
  • 1/2 teaspoon coarse kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon flat leaf parsley minced
  • ground black pepper

Instructions

  1. Preheat the oven to 400°F.
  2. In a medium bowl, combine the softened cream cheese, 1/2 cup of the shredded cheddar cheese, jalapeno, salt and black pepper. Using a spoon, fill each mushroom cap with the cheese mixture. Press the remaining shredded cheddar cheese in the tops.
  3. Place on a baking sheet and cook for 15-20 minutes, or until cheese is fully melted.
  4. Garnish with chopped parsley and serve!
