  • 2 lices Bacon diced
  • 1 onion diced, medium
  • 1 1/2 pounds cauliflower florets
  • 1 cup chicken broth or vegetable broth or stock
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 4 ounce White Cheddar Cheese shredded, divided
  • 2 green onions sliced

Instructions

    Cup of Yum
  1. Turn Instant Pot to SAUTE mode and let the Instant Pot inner cooking pot heat for a couple of minutes. Add diced bacon and cook until crispy. Remove from Instant Pot and place on a plate lined with paper towels to drain any extra bacon grease.
  2. Add diced onion to the pot and cook until the onion is fragrant and translucent, about 2 minutes. Add garlic and continue to cook for 1 minute.
  3. Press CANCEL to stop sautéing.
  4. Add diced cauliflower florets, broth, salt and pepper.
  5. Cover the Instant Pot with the lid and place the valve in the LOCK mode. Turn pressure to MANUAL and set the timer to 3 minutes.
  6. Carefully quick release the value when the timer is complete.
  7. Remove lid and with an immersion blender, blend the cauliflower soup until creamy.
  8. Turn Instant Pot to WARM mode and add half of the shredded cheese and heavy cream. Stir with a spoon until the cheese has melted and the cream is well incorporated.
  9. Serve with cooked diced bacon, sliced scallions and additional shredded cheese.

Notes

  • If you want to make this keto cauliflower soup on the stovetop cook in a 4-6 quart stockpot or Dutch oven. Over medium heat cook diced bacon. Continue to step 2 cooking the diced onion. Cook for 2 minutes before adding the garlic. Add an additional 1/2 cup of broth in step 4. Bring the broth with the cauliflower florets to a boil, then reduce the heat to simmer and cover. Boil for 5-10 minutes or until the cauliflower florets are tender. Continue to steps 8 and 9.
