Ingredients

  • 1 ½ cups peanut butter 24 tablespoons, 384 grams, natural creamy
  • 6 tablespoons butter unsalted
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt sea salt
  • ½ teaspoon stevia glycerite equals about 3 tablespoons of sugar
  • 2 tablespoons coconut flour

Instructions

  1. Line a square 8-inch pan (or a similar capacity rectangular pan) with wax paper.
  2. In a medium saucepan over low heat, add the peanut butter, butter, vanilla, salt, and stevia.
  3. Whisk with a fork until smooth.
  4. Remove from the heat and whisk in the coconut flour.
  5. Using a rubber spatula, pour the mixture into the prepared pan.
  6. Cover and place in the freezer until set, at least 1 hour and preferably 90 minutes.
  7. Cut the fudge into 25 squares and serve.

Notes

  • Make the fudge a day ahead and refrigerate overnight for the best texture after cutting.
  • Use freshly opened natural creamy peanut butter to avoid dry consistency in the fudge.
  • Stevia glycerite used is equivalent to about 3 tablespoons of sugar for smooth sweetness.
  • Store fudge in an airtight container in the fridge for up to one week or freeze for up to three months.
  • Serve fudge chilled or straight from the freezer; it softens quickly at room temperature.
