Ingredients

  • 16 ounces mushrooms 2 trays/packs, *see Notes
  • 1 onion or 2-3 shallots
  • 2 Tablespoon butter or Lard
  • 1 Tablespoon thyme fresh or dried
  • 1 Teaspoon salt
  • ½ Teaspoon black pepper ground
  • ½ cup broth vegetable or chicken *see Notes
  • ½ cup table cream *see Notes

Instructions

  1. Wash mushrooms as per package instructions or brush if they are wild grown. Peel onion/shallots.
  2. Slice mushrooms and also slice your onion/shallots.
  3. Heat up a skillet with the butter/lard and allow it to melt. Stir in sliced onion/shallots and saute over a medium heat setting until they have softened a bit.
  4. Increase stove heat to high and stir in your sliced mushrooms. Stir occasionally and allow mushrooms to reduce. Decrease the heat to medium halfway and cook mushrooms through.
  5. Season with salt, black pepper, and thyme.
  6. Keep over a higher heat setting and pour in broth. Reduce broth a bit.
  7. Pour cream in and mix it all, cook over a medium heat setting.
  8. Cook for 1-2 minutes until you are satisfied and serve up hot.

Notes

  • Use button mushrooms or wild, gourmet varieties like chanterelle, porcini, crimini, portobello, or morel based on availability.
  • In the US, two 8-ounce mushroom packs are typical; in Europe, two 250-gram packs or one 500-gram pack may be used due to size differences.
  • Choose vegetable or chicken broth depending on the main dish; chicken broth pairs well with roasted chicken.
  • Table cream, heavy cream, whipping cream, half and half, or sour cream can be used according to preference and the desired sauce consistency.
