Ingredients

  • 1 lb. boneless chicken breasts
  • 1 tsp EACH: salt, garlic powder, onion powder & sweet paprika
  • 1/2 Tbsp olive oil
  • 4 cloves garlic minced
  • 1 small yellow onion (120g) diced
  • 2 cups chicken stock
  • 1 cup basmati rice (180g) uncooked
  • 1 Tbsp Italian seasoning
  • 1/2 cup heavy cream
  • 1/2 cup parmesan cheese freshly shredded

Instructions

  1. Pat the chicken dry then cut into bite-size pieces. Add to a bowl and toss with the salt, garlic powder, onion powder and paprika. Set aside.
  2. Add the olive oil and garlic to a skillet and set to medium heat. Once shiny, add the diced onion and cook for 3-4 minutes.
  3. Add the chicken and cook for 5-6 minutes, or until no longer pink.
  4. Then add the chicken stock, rice and Italian seasoning. Bring to a boil, then reduce heat to a simmer. Cover with a lid and cook for 15 minutes.
  5. Finally, stir in the heavy cream and parmesan cheese. Serve hot and enjoy!

Notes

  • Optional Variations and Dietary Adaptations
  • Add extra veggies! Throw in a handful of spinach, sun-dried tomatoes or some chopped broccoli for extra fiber! 
  • Brown rice! You can sub the white rice for brown rice (but note that the cooking time will change).
  • Use bone broth! Sub the chicken stock (or chicken broth) for bone broth for extra protein and collagen.
  • Fresh herbs! Add a sprinkle of fresh parsley to give this dish the perfect finishing touch.
  • Use chicken thighs! Sub the boneless skinless chicken breasts for skinless chicken thighs if you prefer dark meat
