Creamy Pumpkin Feta Pasta

Ingredients

  • 2 teaspoons olive oil
  • 3 cloves garlic minced
  • 1 red bell pepper chopped
  • 1 cup pumpkin puree
  • 1 ½ cup chicken broth
  • salt and pepper to taste
  • ½ teaspoon chili powder
  • ⅛ teaspoon smoked paprika
  • 1 cup feta cheese
  • 2 handfuls spinach
  • 8 oz pasta cooked according to package directions

Instructions

  1. Heat olive oil over medium high heat. Once heated add garlic and red bell pepper. Reduce heat to medium and cook for around 3 minutes or until the bell peppers have started to become more tender.
  2. Add pumpkin puree and chicken broth to deglaze the pan. Stir until well combined. Season with salt and pepper to taste, chili powder, and smoked paprika.
  3. Reduce heat to a simmer and cook for 3-4 minutes until the sauce is reduced to your desired thickness.
  4. Fold in the feta cheese and continue to cook for an additional 1-2 minutes.
  5. Stir in the spinach and stir until wilted. About 1-2 minutes.
  6. Fold in cooked pasta and top with additional feta cheese. Serve immediately.
