Ingredients

  • 1 pkg tofu shirataki fettuccine or smart noodle fettuccine, house foods brand
  • 1/2 cup pumpkin puree
  • 2 teaspoons garlic minced
  • 2 tablespoons heavy cream
  • 1/4 cup Parmesan Cheese shredded
  • 1 teaspoon parsley finely chopped
  • salt dash
  • black pepper dash

Instructions

    Cup of Yum
  1. Prepare Tofu Shirataki according to package instructions.
  2. Sauté garlic in pan over medium heat until fragrant. Add noodles, pumpkin, heavy cream and parmesan cheese.
  3. Mix well and add salt and pepper. Top with parsley.
