Creamy Shrimp Fajita Pasta Skillet
A quick and easy 30 minute meal that has all of the things that you love about a fajita. Bell Peppers, onions, pasta, and shrimp are in the most flavorful and creamy sauce that you are going to love!
Ingredients
- 16 ounces pasta shells
- 2 tablespoons olive oil divided
- 3 bell pepper I used a red, yellow, and green, thinly sliced
- 1 onion small, sliced
- 1 pound Shrimp small, peeled and deveined
- 1 package fajita seasoning mix divided, McCormick brand
- 1 (14-ounce) diced fire-roasted tomatoes canned
- ½ cup chicken broth
- ½ cup heavy cream
- 4 ounce cream cheese softened
- 1 cup cheddar cheese shredded
- cilantro chopped, for garnish
Instructions
- In a large pot cook the pasta according to directions. Rinse and drain, and set aside.
- Heat 1 tablespoon of the olive oil in a skillet over medium-high heat Add the peppers and onion and cook until tender. Remove the vegetables from the skillet and set aside on a plate.
- Add the remaining 1 tablespoon of olive oil to the skillet and cook the shrimp for 2-3 minutes or until pink and the edges are lightly brown. Sprinkle 1 Tablespoon of the Fajita Recipe Mix on top of the shrimp. Set the shrimp aside on a plate.
- Add the fire-roasted tomatoes, chicken broth, heavy cream, cream cheese, and remaining fajita seasoning packet to the skillet. Cook over medium-high heat until the cream cheese is melted and the sauce has thickened about 3 minutes. Add cheddar cheese and continue to stir until melted.
- Add pasta, peppers, and shrimp back to the creamy sauce and toss until coated in the and heated throughout. Serve immediately.
