Creamy Smoked Sausage Pasta (dinner made in one pan!)

Big on taste and convenience, this EASY Creamy Sausage Pasta dinner makes EVERYONE happy at the dinner table.  Using just one pan, it’s super fast, perfect for weeknights, using items from the pantry!

Ingredients

  • 1 lb Smoked Sausage Rope sliced
  • 2 tablespoons olive oil
  • 1 cup onion diced
  • 4 teaspoons garlic minced, about 4 cloves
  • 8 ounces bow tie pasta
  • 14 ounces diced tomatoes
  • 2 cups chicken stock
  • 1/2 cup heavy cream or half and half, or milk
  • 1/2 teaspoon cracked pepper
  • 1 teaspoon salt
  • 1.5 cups cheddar cheese grated
  • 2 tablespoons green onions sliced

Instructions

  1. Dice your onion, slice your sausage, mince your garlic and open the can of tomatoes. Cut your green onions.
Cook the onions, garlic and brown the sausage
  1. Heat the olive oil in a large skillet or dutch oven over medium-high heat.
  2. Add the sliced sausage and the diced onion. Cook until the onion begins to soften - 1-2 minutes.
  3. Add the garlic, and cook for 30 seconds.
Add pasta tomatoes and stock
  1. Add the pasta, tomatoes, and stock and cream.
  2. Bring to a boil, then cover and simmer over a low heat for 15 minutes. 
  3. Remove from the heat stir through the cheese.
  4. Replace the lid and allow to sit 5 minutes, so the cheese melts. 
Serve
  1. Stir well, and scoop into bowls.
  2. Garnish with green onions if you wish.
  3. Devour.

Notes

  • Can I use milk or half n half in place of cream?Yes! you may need to add a little cream cheese to thicken the sauce, but it's totally doable.
  • How do I know if my pasta is cooked?Take a piece out of the pan. Al dente pasta will feel firm, not crunchy when you bite down with your front teeth. 
  • Can I use any kind of sausage? Yes! Any fully cooked sausage will work well.
  • Can I double this?Yes, you can, and yes, you totally should. If you have a bigger family than me, or you just love leftovers - double/triple/quadruple away!
