Creamy Spinach Chicken Bake

Three cheeses, spinach, and garlic cook over seasoned chicken breasts to create a creamy oven-baked chicken dish that’s perfect for a family dinner. It’s easy to prepare any night of the week and takes just 10 minutes of hands-on time.

Ingredients

  • 2 pounds boneless, skinless chicken breast
  • 12 ounces frozen chopped spinach thawed
  • 6 oz cream cheese softened
  • 1/3 cup sour cream
  • 1/2 cup freshly grated Parmesan cheese
  • 4 cloves garlic pressed
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 cup mozzarella cheese

  1. 1. Preheat the oven to 400˚F.
  2. Squeeze out as much liquid as possible from the thawed spinach.
  3. In a medium bowl, combine the spinach, cream cheese, sour cream, parmesan cheese and garlic. Stir until well mixed.
  4. Season each side of the chicken breast with salt and pepper, then lay flat in a large baking dish. Spread the spinach mixture evenly over the chicken. Sprinkle the mozzarella cheese over the top.
  5. Cover with foil and bake for 40 minutes. Uncover and bake for an additional 5-10 minutes or until the chicken is cooked through (165˚F internal temp.)
