Creamy Swiss Chicken Bake

Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 slices swiss cheese, or mozzarella cheese
  • ½ cup mayonnaise
  • ½ cup sour cream
  • ¾ cup Grated parmesan cheese, divided
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 4 cups cooked rice, for serving, optional

Instructions

  1. Preheat oven to 375 degrees F. Grease a 9x13 inch baking dish and set aside.
  2. Pat chicken dry and place in prepared pan.
  3. Place a slice of Swiss cheese on top of each chicken breast.
  4. In a bowl mix mayonnaise, sour cream, ½ cup Parmesan cheese, garlic powder, salt and pepper. Spread mixture over chicken and sprinkle with remaining ¼ cup Parmesan.
  5. Bake for 1 hour, until the internal temperature of chicken reaches 164 degrees F. Serve chicken on it's own or over rice if desired.

Notes

  • A Lighter Option.  To cut back on calories, you can use light dairy products (light Swiss cheese, ligh mayo, light sour cream). The flavor is still delicious!
