Creamy Turmeric Soup

When sickness hits, you need a good soup. Try this under 30 minute, gluten free, creamy turmeric soup for winter colds....or anytime!

Ingredients

  • 2 tablespoons sesame oil
  • ½ onion (diced)
  • 1 cup stir fry vegetables (fresh or frozen)
  • 1 tablespoon Turmeric
  • 1 tablespoon paprika
  • 6 cups chicken broth
  • ½ cup coconut milk full fat (stir well before adding)
  • 2 teaspoons oyster sauce
  • 2 cups rice noodles
  • salt (to taste)
Possible add-ins:
  • scallions
  • Thai basil
  • hoisin sauce
  • Sriracha
  • hot chili sauce

Instructions

  1. In a medium sized pot over medium-high heat, add sesame oil and onion. Cook onions until translucent.
  2. Add in frozen mixed vegetables and cook until fork tender, about 5 minutes.
  3. Mix in turmeric and paprika and stir over heat for 30 seconds.
  4. Pour in chicken broth, coconut milk, oyster sauce, and rice noodles. Cook until rice noodles are al dente (follow the package for this since there are so many different types of rice noodles).
  5. Add salt to taste. Garnish with scallions, cilantro, thai basil, hoisin sauce, sriracha, or hot chili sauce.

Notes

  • This does not need to be cooked in a dutch oven (as seen in pictures), any medium sized pan will work for this.
