Ingredients
- 10 ounces refrigerated gnocchi
- 3 tablespoons olive oil
- 1 ½ cups heavy cream
- ¾ cup chicken broth
- 1 cup Parmesan cheese, grated
- 1 teaspoon garlic powder
- 1 tablespoon Italian seasoning
- ½ cup sun-dried tomatoes, drained
- 1 cup spinach, chopped
Instructions
- In a medium-sized skillet over medium-high heat, add 3 tablespoons olive oil. Add in 10 ounces refrigerated gnocchi and fry for a few minutes until golden and crisp. Remove the gnocchi from the skillet and set aside.
- Returning to the same skillet, add 1 ½ cups heavy cream, ¾ cup chicken broth, 1 teaspoon garlic powder, 1 tablespoon Italian seasoning, and 1 cup parmesan cheese,. Whisk over medium-high heat until it starts to thicken.
- Add 1 cup spinach, and ½ cup sun-dried tomatoes, and let it simmer until the spinach starts to wilt.
- Add the fried gnocchi back to the pan with the sauce. Gently toss to combine.
