Creamy Vegan Mashed Potatoes

This easy Vegan Mashed Potatoes recipe is the best dairy-free comfort food side dish for your holiday table or for a weeknight dinner. It’s made with simple ingredients while still being flavorful and hearty.

Ingredients

  • 2 pounds (900g) potatoes peeled and chopped (russets etc)
  • 4 tablespoons vegan butter
  • ½ cup vegan milk soy etc...
  • salt and pepper to taste

Instructions

  1. Add the potatoes to a large pan of boiling water and cook until tender, about 15 minutes.
  2. Drain, allow to cool slightly and chop.
  3. Add the vegan butter to a small pot and heat until melted.
  4. Mash the cooked potatoes with the melted butter and milk and season with a little salt and pepper

Notes

  • Potatoes can become very gummy if they are overworked so make sure you mash them instead of stirring to get the correct consistency.
  • Save about ¼ cup of the liquid they are boiled in if you’d like to thin out your mashed potatoes. The starchy water will help them stay creamy.
  • Make sure you are using UNFLAVORED dairy free milk as a lot of them can be flavored with vanilla. It’s best to use soy milk as it is the most neutral in flavor.
  • For a rustic mashed potato, leave the skins on.
  • Add in some garlic or onion powder to the mashed potatoes.
  • Boil the potatoes with some fresh rosemary or thyme for a pop of flavor.
  • For a hearty chunky mashed potato, use a potato masher and mash slightly to leave in potato chunks.
  • Use a combination of potatoes like red bliss, fingerling and golden potatoes.
