Creamy Vegan Tomato Basil Soup

Ingredients

  • 1 yellow onion diced, small
  • 1 to 2 Tablespoons vegan butter or oil
  • 3 carrot chopped
  • 2 garlic minced, cloves
  • 6 medium tomato quartered
  • 1 bell pepper chopped, yellow or red
  • ½ cup basil fresh
  • 1 ½ to 2 cups vegetable broth
  • ⅛ cup plant-based milk
  • 4 ounces plant-based cream vegan cream cheese, optional
  • ½ Tablespoon sugar
  • ½ teaspoon salt
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon crushed red pepper flakes optional

Instructions

  1. In a large pot, saute your onions with vegan butter (or oil) and carrots for 8 to 10 minutes on medium heat, frequently stirring to avoid burning or browning.
  2. Add in your garlic, diced tomatoes, bell pepper, and basil, along with your seasonings and vegetable broth. Stir until evenly combined. Let everything cook for another 15-20 minutes, or until the tomatoes begin to crack and soften up.
  3. Add in your plant-based milk and cream. Then, using a blender, food processor, or immersion blender, puree soup until smooth, in batches if needed. Taste and adjust seasonings if desired and simmer for 5 minutes.
  4. Serve hot.

Notes

  • Serve the soup hot for best flavor and texture.
  • Enhance with vegan cheese or nutritional yeast for a "cheesy" taste.
  • Garnish with shredded vegan cheese, fresh basil strips, or crushed red pepper flakes for texture and visual appeal.
