Crepes with Pancakes Mix

Ingredients

  • 1 cup pancake mix
  • 1 1/2 cups milk
  • 1/2 teaspoon vanilla extract
  • 1 large egg

Instructions

  1. In a blender, combine all the ingredients until smooth.  Let the mixture sit for at least 10 minutes to settle and refrigerate until ready to use.
  2. Spray a small frying pan with non-stick cooking spray.
  3. Pour approximately 1/4 cup of the batter into the pan.  Cook over medium-low heat.  Turn the pan while cooking from side to side to form an even circle.
  4. Cook for 1 minute on each side until lightly browned.
  5. Remove from the pan.  Continue this process until all the batter is used.
  6. Serve with your favorite toppings and enjoy!

Notes

  • Refrigerate any leftovers for up to 5 days.
