- 1 cup pancake mix
- 1 1/2 cups milk
- 1/2 teaspoon vanilla extract
- 1 large egg
Instructions
- In a blender, combine all the ingredients until smooth. Let the mixture sit for at least 10 minutes to settle and refrigerate until ready to use.
- Spray a small frying pan with non-stick cooking spray.
- Pour approximately 1/4 cup of the batter into the pan. Cook over medium-low heat. Turn the pan while cooking from side to side to form an even circle.
- Cook for 1 minute on each side until lightly browned.
- Remove from the pan. Continue this process until all the batter is used.
- Serve with your favorite toppings and enjoy!
