Crescent Roll Breakfast Casserole

This delicious crescent roll breakfast casserole is made with flaky, buttery crescent rolls as a crust then layered with cheese, breakfast sausage, eggs and any favorite veggies and baked until golden brown!

Ingredients

  • 1 pound breakfast sausage
  • ½ cup onion diced
  • ½ cup red bell pepper diced
  • 2 cloves garlic minced
  • 2 cups spinach chopped, fresh
  • 8 ounces crescent roll dough sheet
  • 1 cup cheddar cheese divided, shredded
  • 10 large egg
  • ¾ cup half-and-half
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons green onion optional garnish, sliced

Instructions

  1. Preheat the oven to 400° F and grease a 9x13" casserole dish with non-stick cooking spray or oil.
  2. In a large skillet, add the sausage and cook over medium heat for 3-4 minutes, crumbling as it cooks
  3. Add in the diced onion, bell pepper, and garlic and cook for an additional 5 minutes until the sausage is completely cooked and the vegetables are soft.
  4. Remove the skillet from the heat and add the spinach and stir to mix in well.
  5. Unroll the crescent sheet and spread it out in the bottom of the prepared dish.
  6. Sprinkle ½ cup of cheese over the crescent sheet.
  7. Place the sausage mixture over the cheese on the crescent sheet and spread it out evenly.
  8. In a large bowl, add the eggs, half-and-half, salt and pepper and whisk together well.
  9. Pour the egg mixture over the sausage mixture and add the remaining ½ cup of cheese.
  10. Bake for 40-45 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
  11. Garnish with green onion if desired.

Notes

  • Add any veggies you'd like. Diced mushrooms, chopped broccoli, diced tomatoes, poblano pepper,
  • Add 1 cup of hashbrowns on top of crescent roll dough
  • Add ½ cup of feta cheese or goat cheese.
  • Swap the cheddar cheese for any other kind of cheese you desire. Colby Jack, Monterey Jack, swiss cheese, mozzarella cheese, Jalapeno Jack cheese are all great options.
  • Swap the sausage for diced ham, Italian sausage, ground beef or bacon.
  • Make it vegetarian by using a plant based sausage.
  • For a little spice, add a pinch of red pepper flakes or a minced jalapeño into the sausage mixture.
  • Use 1 teapspoon of garlic powder and onion powder if you don't have fresh.
  • Use whole milk or a low fat milk if desired.
  • I’m using a crescent roll sheet. If you can’t find the sheets, use a pack of 8 crescent roll and pinch the seams together well.
