Crescent Roll Breakfast Casserole Recipe

Easy Crescent Roll Breakfast Casserole has a crescent roll crust topped with sausage, cheese and eggs. It's a great breakfast or brunch recipe that can be made ahead.

Ingredients

  • 1 pound pork sausage
  • ½ cup diced yellow onion
  • 1 8 ounces can Pillsbury crescent rolls or 1 can crescent dough sheet
  • 10 eggs
  • ½ cup milk
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 cup mozzarella cheese shredded
  • 2 cups cheddar cheese shredded, divided

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Grease a 9 x 13 inch baking dish with cooking spray or butter.
  3. If you are using crescent rolls unroll them and place side-by-side in the baking dish, pressing seams together to seal. If you are using a crescent dough sheet, unroll and place in a baking dish stretching if needed to cover the entire bottom of the dish. Set aside.
  4. In a skillet brown pork sausage and onion until no longer pink. Drain off any excess grease.
  5. While the sausage is cooking, combine eggs, milk, pepper and salt in a mixing bowl. Whisk to combine. Add Mozzarella cheese and one cup of cheddar cheese, stir to combine.
  6. Sprinkle cooked sausage mixture over the top of crescent roll dough in the baking dish. Then pour the egg mixture on top. Sprinkle the remaining 1 cup of cheddar cheese.
  7. Place in a preheated oven at 350 degrees Fahrenheit and bake for 35-45 minutes or until a knife inserted in the center comes out clean.

Notes

  • FRIDGE: Leftover casserole can be stored in the fridge in an airtight container for up to 3 days.
  • FREEZER: To freeze this casserole, either wrap it well or place the leftover into an airtight container. It will freeze for up to 2 months.
  • Use crumbled cooked bacon or even cooked chunks of ham to mix up the flavors. You can also add chopped fresh vegetables to the casserole.
