Ingredients
- 4 barley rye husks (find them at your local Greek market)
- 5 beefsteak tomatoes
- 1 1/2 tsp salt
- ground pepper
- 1/2 cup black olives
- 2 tbsp capers
- 1/3 cup crumbled Feta cheese
- 2 garlic cloves, grated
- 4 tbsp olive oil
- 2 tbsp red wine vinegar
Instructions
- Add the barley rye husks to a bowl. Cut the tomatoes in half and grate each tomato onto the barley rye husks, starting with the cut side and grating until you reach the skin of the tomatoes (alternatively you can finely dice the tomatoes and then add to the bowl).
- Sprinkle the 1 1/2 tsp salt over the tomatoes and let sit for 5 minutes. Use a spoon to start to break up the barley rye husks a bit before adding the rest of the ingredients - olives, capers, crumbled feta cheese and then sprinkle the grated garlic, olive oil and red wine vinegar. Toss everything together and adjust seasoning with more salt and pepper if desired. Enjoy immediately!

Notes
- Look for the barley rye husks at your local Greek market.
- This salad is delicious as soon as it's made!
