Ingredients

Baked Avocado Fries
  • ½ cup all-purpose flour 50 g
  • 1 tsp each cumin, garlic powder, smoked paprika, salt
  • 2 eggs
  • 1 cup panko breadcrumbs 30 g
  • 2 avocados
Chipotle Ranch Sauce
  • ½ cup plain greek yogurt 120 g
  • ¼ cup mayonnaise 60 g
  • 1 Tbsp chipotle sauce from a jar of adobo peppers
  • 1 tsp ranch seasoning

  1. Prep: Preheat oven to 400°F (204°C). In a medium bowl, stir together the flour and spices. In a second bowl, whisk the eggs until the whites and yolks are combined. Place the panko in a third bowl.
  2. Cut Avocado: Cut the avocados in half lengthwise and remove the pits. Place the avocados cut side down and cut each half into 4 equal-sized pieces, then gently peel the skin off of each.
  3. Bread: Working one at a time, dip each avocado slice in the flour first, then egg, then panko. Place on a parchment-lined baking sheet.
  4. Bake: Bake the fries for 15 minutes until golden brown and crispy.
  5. Sauce: While the avocado bakes, combine all sauce ingredients for serving.

Notes

  • To air fry, place the breaded avocado fries in an air fryer in a single layer. Air fry at 400°F (204°C) for about 7 minutes until golden brown and crispy.
