Crispy Buffalo Chicken Tacos

Ingredients

  • 1 1/2 to 1 3/4 lbs. boneless skinless chicken breast (or thighs, cut into cubes)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 4 Tablespoons butter
  • 1 cup buffalo sauce (Frank's Buffalo Wing Sauce)
  • 8 to 10 small flour tortillas (or corn)
  • 2 cups cheese (grated)
  • 2 green onions (sliced)
  • cilantro (chopped)
  • oil or butter (for cooking)

Instructions

  1. Start by cutting the chicken into small bite-size pieces. Place in a bowl and toss with salt and pepper.
  2. Heat a large skillet over medium-high heat. Add butter. Once the butter is heated, add the chicken. Cook for about 5 minutes, or until fully cooked through. Stir in buffalo hot sauce.
  3. Remove the cooked chicken from the skillet. If you want the tortillas to be slightly crispy, drizzle some oil or butter in the pan. Place tortillas in the skillet and sprinkle cheese into the center of each tortilla.
  4. Top with buffalo chicken. Sprinkle with chopped cilantro. Optional: sprinkle with green onions. Heat until cheese is melted and fold over.
  5. Serve with homemade Cilantro Jalapeno Ranch Dressing. May top with avocado, pickled jalapenos, blue cheese, or sour cream.

  • Yes! Place the chicken breasts in the slow cooker and season with salt and pepper. Pour buffalo sauce over the chicken. Cook on low for 4 hours or on high for 2-3 hours, until the chicken is tender and can be easily shredded. Shred the chicken in the slow cooker and mix it with the sauce.
  • Shred the rotisserie chicken into bite-sized pieces. Heat the buffalo sauce and melted butter in a skillet over medium heat. Add the shredded chicken to the skillet and toss until fully coated and heated through.
