Crispy Chinese Lemon Chicken

Ingredients

Chicken:
  • 1 chicken breast cut into small pieces, large
  • 1 tablespoon cornstarch
  • ½ teaspoon salt sea salt
  • ¼ teaspoon black pepper
Batter for chicken:
  • ½ C all-purpose flour
  • ¼ C potato starch or cornstarch
  • ¼ C rice flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt sea salt
  • ¾ C water cold
For frying:
  • peanut oil or high smoke-point vegetable oil
Lemon sauce:
  • lemon juice of 2
  • 3-4 tablespoon granulated sugar
  • 1 tablespoon cornstarch
  • ½ C chicken stock or cold water

Instructions

Season the chicken:
    Cup of Yum
  1. In a bowl, mix the cut chicken pieces with cornstarch, sea salt and black pepper.
  2. Let it sit for 15-20 minutes in the fridge.
Make the batter:
  1. In a mixing bowl, combine all-purpose flour, potato starch, rice flour, baking powder and sea salt.
  2. Add in the cold water and stir until combined.
  3. The batter should be slightly thick, but smooth and gloopy.
Fry the chicken:
  1. Heat up a pot of frying oil over medium high heat, until it reaches a temperature reaches 375F.
  2. Coat pieces of chicken in the batter and carefully drop into the hot frying oil.
  3. Fry in batches, for about 5-7 minutes, until crisp and golden in color.
  4. Remove with a slotted spoon an drain on paper towel.
  5. Repeat with the remaining chicken.
Make the lemon sauce:
  1. In a small saucepan, combine lemon juice and sugar.
  2. Bring to a simmer.
  3. Combine chicken stock and cornstarch in a bowl and add it to the lemon mixture.
  4. Bring to a boil and cook until the lemon sauce thickens.
  5. Give it a taste and adjust with additional sugar as needed.
Assemble: (just prior to serving)
  1. Add the fried battered chicken pieces into the lemon sauce and coat well.
