Crispy Garlic Baked Potato Wedges (+ Air Fryer Method)

These crispy garlic baked potato wedges use red or small russet potatoes cut into small wedges, tossed with canola oil, seasonings, and optional potato starch for added crispness. Garlic is added midway through baking to preserve its flavor. Fresh parsley finishes the dish, with seasoning adjusted to taste. The method can be adapted to an air fryer for convenience and crispy texture.

Ingredients

  • 4-5 red potato cut into small wedges, or small russet potatoes
  • 1 Tablespoon canola oil
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • 2 Tablespoons potato starch optional, for extra crispiness
  • ¼ cup parsley chopped, fresh
  • 1-2 Tablespoons garlic finely chopped
  • salt to taste
  • black pepper to taste

Instructions

  1. Preheat oven to 425 degrees F. Cut potatoes into small wedges and place on a baking sheet. Drizzle with oil, and sprinkle with salt, chili powder (or pepper), paprika, and potato starch if using. You could do this step in a bowl and mix it all there. Toss well to coat and spread in one even layer on the tray.
  2. Bake for 10 minutes, remove the tray from the oven and springle the garlic. Put back in the oven and bake for another 5 to 10 minutes until fries are crispy and golden brown.
  3. Toss with fresh parsley, adding additional salt and pepper to taste, if needed. Serve immediately with condiments of choice.

Notes

  • Nutritional yeast or dairy-free parmesan can be added to make vegan garlic parmesan flavor.
  • Enhance flavor with herbs such as rosemary, thyme, oregano, or Italian seasoning.
  • Use seasoning blends like Cajun or taco for different spice profiles.
  • Try topping with vegan ground 'beef', salsa, avocado, and vegan sour cream for vegan nacho fries.
  • Adding vegan cheese and broiling until melted makes a vegan cheesy variation.
